The land, the lakes, rivers and forest all provided opportunities for lumbering, fishing, mining and farming. The majority of those that immigrated were German, Dutch, French Canadian, Norwegian and Irish. With the various groups that entered Wisconsin came a wave of new knowledge, specifically within the agricultural sector of the state. For many immigrants, farming was a familiar job prior to traveling to the United States. Many families saw the land within Wisconsin to be a place where their farming could continue, despite being in a new and unfamiliar setting. Through this trend of land pursuit, immigrants helped lay the foundation for the agricultural future of Wisconsin. During the time period from 1840 to 1880, Wisconsin was nicknamed “America’s breadbasket.” This phenomenon can be attributed to the low costs associated with wheat production alongside a high rate of return on the investment of planting wheat. Mechanical advancements during the 1850s led to the mass production of wheat during the 1860s. From 1860 to 1865, Wisconsin farmers harvested over 100 million bushels of wheat, two-thirds of which were exported. The decline in the production of wheat began in the 1870s. The cause of the decline is most closely related to the depletion of nutrients in the soil due to wheat production, Chinch bugs, unsteady prices of wheat, and the creation of railroads that opened access to new production frontiers. Between 1871 and 1891, the acres available for wheat farming declined from 3,572,000 to 1,889,000 acres. Through education efforts surrounding the state’s soil and climate, and experimentation with a variety of crops, farmers began to understand the environmental, economic, and social benefits surrounding crop diversification. Specific crops that were implemented include feed crops which then fueled livestock production and dairying. Other efforts surrounded the cultivation of hops, tobacco, vegetables, and fruits. These new crops allowed for the upgrade of knowledge and equipment which helped to propel Wisconsin forward as an agricultural strength within the United States. According to the Wisconsin Historical Society, “[b]y 1899, more than 90 percent of Wisconsin farms raised dairy cows.” Many of the new dairy farmers had settled in Wisconsin during the 1840s and 1850s, largely New Yorkers looking for new economic opportunities. Those from the east were often ignorant of the climate and soil types in Wisconsin and so were not very prosperous when it came to farming. They did, however, bring with them knowledge of commercial dairying practices. The shift in production from wheat to dairy did not happen overnight nor without help from influential institutions of the time. In fact, the dairy movement was promoted by various research projects at the University of Wisconsin - Madison. Professor William A. Henry carried out research in new dairy methods and Professor Stephen Babcock (shown here) conducted experiments with butterfat content in milk. The University of Wisconsin also championed education outreach for farmers through “short courses” and “winter courses,'' and also aimed to connect farmers and scientists in hopes of creating innovative agriculture solutions. An important organization, formed separately from the University of Wisconsin, was the Wisconsin Dairymen's Association, which helped to connect farmers. According to the Wisconsin Historical Society, “[t]he estimated number per thousand acres at the beginning of 1930 was 57.8 head, or nearly three times as many as in 1890, forty years before.” These numbers refer to the number of cows and heifers two years or older that are kept for milk production per thousand acres. Because of the expansion of Wisconsin in cow and heifer production, the state began exporting dairy cows - an economic boon for farmers. The rise of exportation was also due to the high quality of the cows, and the fact that most of the state had been tested for bovine tuberculosis. Sadly, due to the impacts of the Great Depression during the 1930s, many dairy farmers faced economic turmoil as their product prices were cut in half. Many farmers banded together in protest through strikes and demonstrations to withhold dairy supplies and suspend processing until prices for farmers improved. However, economic farming crises have pointed to systemic issues that exist within food systems. Many children within these farming families now had the opportunity to leave their homes and further their education, since the machines replaced the amount of human power that was once needed within family households. Lastly, innovation also brought about a steady increase in the dairy industry. The value of the industry went from $300 million in 1943 to more than $500 million in 1946. Starting in the 1970s, the devaluation of the dollar and flexible exchange rates along with high rates of unemployment and inflation generated a change to monetary policy, where the government encouraged investments in the agriculture sector. With the opening of global markets, there was an agricultural boom of increased production in order to meet the demand for U.S. exports; feed grain and wheat production nearly doubled. Producers in the U.S. made large investments in land and equipment. Accordingly, American agriculture became vulnerable to economic and political power. Farmers across the nation were threatened to “get big, or get out” by U.S. government officials, encouraging maximum efficiency production, especially of corn. In the 1980s when the dollar appreciated, the value of agricultural exports increased, thus slowing exportation. Later in the decade, the value of agricultural exports, like corn, soybeans, and wheat, all fell by more than 50%. Additionally, the average farm income was only half of the income generated just a decade prior. The farmland was originally purchased by the Stapleton family in 1855 and was sold to Dick Cates Sr. in 1967. As an attorney in Madison, Dick’s father wanted to return to his farming roots while instilling valuable lessons of hard work into his five children. Dick grew up working on the farm, and continued to work many summers through college and graduate school. After marrying in 1976, Dick and his wife Kim pursued graduate work in Soils at Montana State University and UW-Madison, and then worked overseas developing a large dairy farm in Saudi Arabia. But with a passion for conservation and a love of the land, Dick and Kim eventually returned home to take over the family farm and become its caretakers in 1987. A central challenge of the steep and wet farmland was figuring out what the land could handle. With the land’s oak savannah origins, Dick recognized its natural ability to grow rich grasses and thus implemented rotational grazing for his herd. With growing national pressures to increase production, Dick expanded his pasture area and herd size up to 800 cattle by the mid-1990s, yet they still were struggling to make profits. Kim suggested they sell their beef to local restaurants, which prompted their return to regenerative grazing and initiative to sell to customers who care. April began vegetable farming in 2009, started her own CSA, and was a vegetarian for a decade before she started to raise livestock. In 2011, April began working with pork from farrow to finish. April befriended Marie Raboin through local agriculture workshops and networks like the Soil Sisters, which promotes women interested in sustainable agriculture. As April and Marie’s friendship grew, Marie saw the importance of Dorothy’s Range approach to pig farming. This work emphasized eating and working in ethical and transparent food systems that foster community growth. The ties these two have were furthered through visits to Dorothy’s Range where Marie was able to see the care that April put into the treatment of her animals and watershed. April herself has history within the restaurant industry, furthering her value of the local food movement. Currently, Brix and Dorothy’s Range engage in a symbiotic relationship, as April sells her pork products to Brix, and Brix gives Dorothy’s Range some of the apple pomace from post-apple pressing.
