UW-Madison Environmental Studies Capstone Course
In Fall 2022, 15 juniors and seniors completed their capstone course for their Environmental Studies Major in partnership with The Brix Project. With a focus on applied learning, students created capstone projects that highlight and further the work of The Brix Project within our local food system.
Brix Sourcing Analysis
We investigated Brix’s food and drink sourcing for an entire year and calculated just how local our Farm-to-Table restaurant really is. Our goal: to improve transparency in the farm-to-table label, and give ourselves a benchmark for how we can improve.
Small Batch Science
We’re committed to engaging in conversations about our local food system that center science, research, and understanding in our community. During Small Batch Science nights last summer, we invited researchers, graduate students, and environmental activists to Brix to present short, data-driven flash talks on all topics relating to food, agriculture, climate, and ecology. We learned about a wide range of issues, from soil science to regenerative ag, from insect farming to health impacts of decarbonizing our energy system.
