Apple Description

Fairly large apple.  Light green with some russeting around the stem.  Crunchy and fairly tart.  A seedling apple from Iola, Wisconsin.

Specific Gravity = 1.047

pH = 3.63

Total Acidity (Malic) = 7.2

Total Tannins = 0.09%

Cider Description

Color - Yellow, with a slight hint of lime green.  Mostly clear.

Nose - Faint green apple aroma.

Flavor - Medium body leaning towards light.  Nice acidity - not too strong, not too weak.  Easy to drink, green apple flavor with a note of pine.  Little to no noticeable tannins.

Overall Impression - Exceptionally drinkable cider.  Light and refreshing.
