Seasonality at Brix: Fall

The leaves begin changing colors and the breeze feels slightly cooler, welcome to fall at Brix!

As the summer months start winding down, there’s still an abundance of fruit and vegetables available throughout autumn. During these transitional months, the menu at Brix features summer crops such as mixed greens along with fall staples such as Brussels sprouts, squash, leeks, radishes, swiss chard, and root vegetables including carrots and potatoes. One of the quintessential fall dishes offered at Brix is the Chicken Romesco, made with Seven Seeds farm chicken, wild rice, and butternut squash sourced from Squashington Farms.

Fall also marks the beginning of apple season. These apples are harvested and juiced for Brix’s ciders. Apples are sourced from around 21 farms throughout Wisconsin, and these apples are juiced for a cider blend that's specific to each orchard. Some of the main orchards that Brix sources from include Munchkey Apples, Ski Hi Fruit farm, Apple Berry Farm, and Epplegarden orchards.

The autumn menu at Brix also pays tribute to some of the holidays and community wide events celebrated in Mount Horeb. Given the rich Scandinavian culture of the area, Brix celebrates Oktoberfest in late September. They offer a house made kraut brat made of pork sourced from Dorothy’s Range that's served on a sausage bun made of flour sourced from Meadowlark Organics. Later on in the season, to celebrate Halloween, Brix serves a Blood and Guts Apple crisp which uses apples sourced from Atoms to Apples for the community’s annual Witches Night out.
