Seasonality at Brix: Summer

The sun is shining and a new season of fresh produce has arrived. Welcome to summer at Brix!

Wisconsin’s climate supports a huge variety of different fruits and vegetables throughout the summer months. Greens, peppers, melons, squash, and berries are just some of the fresh produce you’ll find at Brix all summer long. The abundance of veggies means that you’ll see a whole new range of dishes on the menu. 

This past summer, the kitchen used snow peas, summer squash, and cabbage in their Thai peanut dish. On the sweeter side, blueberries from Small Folk Farm were used for fresh blueberry mousse. With such a large variety of local produce available, Head Chef Kasandra Sonderberg (Kas) is able to try out new dishes utilizing the variety of produce that arrives each week!

Throughout the summer, as with the rest of the year, Brix serves meat from Seven Seeds Farm, the farm partner we’ll highlight in this season’s post. Seven Seeds is a 7th generation, organic farm located in southwest Wisconsin’s driftless region between Spring Green and Dodgeville, WI (just 20 miles away from Brix!) They specialize in raising organic, certified 100% grass-fed, and Animal Welfare-approved beef, pork and chicken – foods that Brix needs all year round. Their chicken goes into the seasonal, rotating chicken dishes that we’re highlighting in these posts. For summer this year, that meant coconut chicken.

While the vast majority of Brix’s menu is locally sourced, some staple foods simply aren’t grown in our immediate region. In these cases, Brix always sources from organic farms and works to find the closest supplier possible. For example, the jasmine rice featured in the coconut chicken and Thai vegetable dishes is produced in Missouri!
