Seasonality at Brix: Spring

Seeds are ready to find their new home in the soil: welcome to spring at Brix!

After a cold Wisconsin winter, Brix’s restaurant will start to gain a new batch of veggies in spring. This is exciting for both Brix and customers alike! Brix sources their spring veggies from many farms, and for this particular season, we will highlight Squashington Farms.

At Squashington, myriads of veggies will be planted and harvested. Spring is very greens-heavy, with lots of brassicas including: kale (full size and baby), arugula, broccoli, cabbage, turnips, radishes, bok choy, collard greens, tatsoi, and mizuna. Additionally, herbs planted and harvested include: parsley, shiso, tulsi, mint, lemon balm, basil, dill, and depending on the season, sometimes thyme and oregano. Lastly, although apples are not harvested in the spring, they do start blossoming during this time frame.

Brix’s partnership with Squashington is quite rare for a restaurant, in the best way possible! With Squashington being 7.3 miles away from Brix, it’s guaranteed the produce will be fresh and recently harvested. Thus, Brix avoids receiving subpar produce due to a long travel time. Brix also contributes to mitigating climate problems by sourcing from farms that grow their produce in environmentally-responsible ways.

Because Brix’s menu is based on seasonality, different dishes are curated to highlight in-season produce. For example, during spring Brix offers a Thai peanut dish featuring baby greens. This is a great way to keep consistency with certain ingredients (the chicken), while honoring seasonal changes to the supporting ingredients, all while creating a delicious dish that stands alone from the previous season. 

Another unique aspect of Brix is the featured different dishes based on holidays or fun celebratory events, such as making Yoda pancakes to celebrate “May the 4th be with you”, or making Irish meat pies and corn beef for Saint Patrick’s Day. This is a great way to encourage community members to collectively come together within the city of Mount Horeb to eat and socialize with neighbors and friends!
